The fruiting cycle in the olive tree, i.e. flower differentiation and development, fruit set and ripening, lasts for one year (Sfakiotakis, 1993). Flower formation in the olive tree takes place in the period from late January to early June. The critical period for flowering is January and February. Full flowering occurs in the southern regions of the country in April and in the colder regions in May depending on the local climatic conditions and the variety of the olive tree.

Knowledge of the period of differentiation and flower formation in olive trees is critical and coincides with the start of new vegetation formation (Sfakiotakis, 1993). In olive groves that are not irrigated and not sufficiently supplied with nutrients there is a tendency for miscegenation.
